It is possible to enjoy pizza as a vegan and you can top it with as many veggies as you like !
I made mine right from scratch ( I know right) like I’m talking dough and everything !
Here is how it went down
1 cup whole wheat flour
1 pkg of Pizza yeast
1.5 tsp of sugar
3/4 tsp salt
2/3 cup hot water
3 tbsp of oil
Mix all ingredients in a bowl until dough forms . Knead on a floured surface until smooth and elastic .
Roll out on a floured surface then place on a greased pizza pan .
Add pizza sauce or marinara to the pizza and add Italian seasoning and garlic powder ( amount to your liking)
Add whatever veggies you like , tonight I kept it simple and added mushrooms and tomatoes. Then added on some nutritional yeast .
Top pizza with Daiya “cheese” . I used both cheddar and pepper jack flavor tonight !
Cook in a 375 degree oven for about 10-12 minutes or until dough is cooked. Broil on high for 5 minutes .
Yumm freaking Oh !
Who needs take out !
This breakfast has combined all my most favorite things !
I’m all about the easy peasy lifestyle and since fully giving up eggs for breakfast I need a hearty substitute and this fits the bill. Overnight Oats are so easy to prep and you can grab and go eat them . Here’s how this one came together .
Take a large mason jar or mug ( I like my Vega Mug )
Add large flake oats to fill about 1/4 of the jar
Then add 1 tbsp of PB2 or a tbsp of nut butter
Add 1 scoop of Vega Mocha Protein powder
then add 1 tbsp of unsweetened cocoa , sliced bananas and top with almond milk or any non dairy milk
Stir and Put lid on container and let sit overnight in refrigerator . In the morning stir and top with coconut whip !
I’m no baker , never claimed to be but darn it all – I can make Banana Loaf . My good friends over at Vega sent me some Mocha protein and I had to get creating !
I have made a most epic smoothie with it and you can find the recipe here Mocha Coconut Frappe .
Today I noticed some seriously ripe bananas on my counter and I knew what to do , so here it is
Mocha Protein Banana Loaf
4 ripe bananas
2 scoops Vega Mocha Protein
1/2 cup unsweetened applesauce
1 tsp unsweetened cocoa
1 tsp of baking soda and powder
1 tbsp vanilla
1/2 cup of sugar or sugar substitute
2 cups of whole wheat flour
3/4 cup unsweetened almond milk
Mash bananas , add applesauce , add protein , add cocoa
Add powder , add soda , vanilla , then add sugar and flour .
Step three Add milk and nuts and stir . Coat a loaf pan with Pam and bake for 45-50 minutes at 350 degrees .
Step four- let cool , slice and eat with peanut butter ( that’s how I like it )
I am an avid Twitter , Facebook and Instagram follower , all social media actually . I follow tons of runners , running accounts and elites . It sometimes depresses me , all these people who run races every weekend , are they “more of a runner” than me? You see Canada was a complete Winter Hell this year and the last patch of snow in my yard just melted this weekend . I had to treadmill all winter long , I still trained , I still ran . There were no winter races and actually we are 4 months into 2015 and I have yet to run one still . I always thought that if I wanted to be considered a runner by the running community – I actually had to run races .
My first Scheduled race isn’t until May at the GoodLife Fitness Toronto Marathon. I’m nowhere near ready but I have never thought of winning a race or even placing , my goal at any race is to just cross the damn line – upright . I have become very comfortable running in sloth mode because I just love being outside . I realize running races is super fun and awesome , but so is actually just running and being you . I’m not fast , I’m not an elite – I’m just a 44 year old mom who escapes on those runs . If not running a million races a year makes me less of a runner then so be it , I don’t need medals to justify my ability to be a runner . All I need is solo time on the trails and pavement, the sun in my face and letting my brain wander – that what’s makes me a runner .
This meal came together in about 4 minutes and I’m not going to lie , it was freaking delish! There is exactly 4 ingredients to make it and it also makes a great snack .
You will need a package of this
Simply heat up in some coconut oil over a low temp for about 1-2 minutes per side
Grab some romaine leaves , top with kale , sprouts and what ever fillings you like , add the tempeh and drizzle with balsamic vinegar .
Roll up and eat !
Easy peasy !

I’m a skeptical faux meat eater and have not found a lot that I enjoy but this product is Ah Maz Ing !
I cooked these as per package directions , in the oven last night and had a traditional “fish” and chip meal .
I had leftovers today and so wanted to make a fish taco .
So I did !
I just reheated the leftovers in a pan with some coconut oil to crisp them up . Then layered them on a whole wheat tortilla with lettuce , avocado and tartar sauce ( mix veganaise and relish) !
So freaking good ! Quick and easy lunch for one!

I’m struggling right now with a big decision that affects both my personal and professional life .
I am taking this time to take a step back and look at what it is that makes me happy .
A career is great if you are 100% satisfied in it , you work hard and you are successful . But – does the money in the bank determine that as well ?
At what point do we realize that having a successful career isn’t at all about the $ figure ?
I currently do very well at my job but when I look at my time spent , loss of family time , hours put in am I really doing ok?
I am going to be making a Huge decision in the next week or so and the #1 reason for it – passion . What am I passionate about ? What is my motivation? What drives me?
I’m taking this time to reevaluate life in general and making changes that affect who I am and not what I make. Will I be earning what I earn now – No Way but is this why we work hard , simply to build bank accounts and have things .
I have things , I am happy but I need change and change is good .
It’s time to make my job more about my passion than money in the bank .
