Here is yet another easy peasy comfort food recipe that takes no time to whip up . 

Vegan Lentil Chili 

1 can of lentils or 1.5 cups cooked lentils

1 can diced tomatoes

1 can each of kidney beans and black beans 

1.5 cups cooked brown rice

1 avocado 

Daiya cheese shreds 

Garlic powder, cumin ,onion powder and chili powder 

Rinse and drain beans

Add lentils to a saucepan 

Add in beans , tomatoes and spices ( to taste) 

Let simmer on medium heat , stir in rice after about 10 minutes

Let cook an additional 10 minutes on low until warmed through . Serve with avocado and Daiya shreds . 

Eat with a loaf of warmed bread and you got one heck of a comfort meal!
