Ok so I’m posting this on a Saturday not a Monday but none the less This is an Amazing meal!

This soup is vegetarian and contains lots of vital nutrients! Here is how it all came to be!

Start with these ingredients

1 carton of fresh cheese tortellini
1 carton of vegetable stock
1 lg can of diced tomatoes
1 can coconut milk
Minced garlic
Diced onion
1 tbsp sugar
Thyme
Salt & pepper
Chili flakes or powder
2 cups of spinach
Mozzarella cheese , shredded for topping

Sautée garlic and onion in oil

Add chopped spinach until it starts to wilt

Add tomatoes , stock and sugar

Add tortellini , spices and cook on low for about 10 minutes

Add 1/2 can of coconut milk , stir , cook covered for about 5 minutes more

Serve with shredded mozzarella cheese and a big loaf of fresh bread
