So this was tonight’s Meatless Monday meal and they were amazing!
Wanna know the “recipe” ?
Loosely termed recipe because I am neither a chef or anything more than a recipe destroyer .
Let’s just call this a creation
Tex Mex Lentil Cups
1 cup of brown lentils
3/4 carton of vegetable broth
1 cup of cooked brown rice
1 cup breadcrumbs
1 cup salsa
3/4 cup of nutritional yeast
1/2 sweet potato peeled
Chili powder , Italian seasoning, cumin , garlic powder, onion powder
Simmer the lentils in the broth until soft and tender. Set aside to cool , you can always make up a batch to use for later use.
Once cooled put in a big bowl and add breadcrumbs , yeast , rice , salsa and spices
Mix well , then shred the sweet potato into the mix
Spray a muffin tin with cooking spray and spoon in mixture
Cook on 400 degrees for 15 min
Top with salsa and a slice of avocado , you can even spoon on some sour cream and cheese too !
Leftovers for days ! Tomorrow I’m heating one up and eating it stuffed in a pita ! So many ideas for these little gems
