I wasn’t sure how this was going to turn out , but it was Epic!!!!

I do not like spicy things so I had to pair this up perfectly – here is how it happened!

4-5 boneless skinless chicken breasts
1/2 c low sodium soy sauce
1/4 c Sriracha sauce
3/4 bag of sweetened flaked coconut


Combine soy and sriracha sauce in a bowl and coconut in a larger bowl

Dip chicken into wet mixture


Then roll breast in the coconut flakes

Place chicken onto a foil lined baking sheet that has been sprayed with Pam


Bake in a 375 degree oven for about 35-40 minutes

When there is 5 minutes left , broil chicken to crisp up the coconut
Serve with a Thai Chili Sauce or Plum sauce for dipping


So easy , so yummy !
