No this is not one of those “eat only cabbage soup for a week and you will lose weight ” posts!

This is a “I freaking love cabbage soup so I’m going to make it ” post .

Basically it is a clean out the fridge kinda soup , which is my favorite thing to do so here are the deets.

In a large skillet sautée in butter (yes butter )
1/2 large onion diced
1 red pepper diced
Handful of diced carrots
4-5 stalks celery
1 pkg sliced mushrooms

Then add to skillet 1 head of cabbage , roughly cut
1 can diced tomatoes
2 cartons low sodium vegetable broth
Garlic powder
Mrs Dash
Italian seasoning
Thyme
Salt & pepper

Make sure cabbage is fully covered by broth

Cover and let simmer all day long on low ( or throw it all In the crockpot )
Serve with buttered fresh bread and Bob’s your uncle ! Soup is ready
