This is the most epic of casseroles that I guarantee the whole family will love , even mini diva gobbled this up!

Here’s how it went down

This is a crockpot recipe too so get that out of the cupboard!

You will need
1 diced red onion
1 diced red pepper
Diced carrots
Sliced mushrooms
3-4 stalks celery diced
1/2 bag of pre washed Spinach and Kale mix
1 bag of Vegetarian Crumble (or ground beef for non veggie version )
2 jars organic Marinara Sauce
1 large Spaghetti Squash
Shredded cheese
Parmesan Cheese
Garlic powder , thyme, Italian seasoning

Put all diced veggies into the crockpot

Place the spinach and kale mix on top of veggies

Add the bag of vegetarian crumble and spices

Add sauce , I used this kind

Let cook on low all day .
When ready , stab squash multiple times ( sounds freaky) and microwave for 9 minutes
Cut in half and scoop out seeds and membrane

Grease a 9×13 pan and scoop out squash flesh , later in pan

Top with “meat ” mixture , Parmesan and shredded cheese

Bake uncovered in a 350 degree oven for 25-30 minutes
