First attempt at these


I had a few extra minutes to spare before Crossfit tonight , so I threw these together. Here’s what’s in them

4 eggs
1 cup unsweetened almond milk
2 tbsp honey
1 tsp baking powder
1 tsp baking soda
3 tbsp unsweetened cocoa powder
1 cup unsweetened shredded coconut
1 cup coconut flour


Beat eggs, milk and honey

Add cocoa and coconut


Add remaining ingredients and mix


Spoon into muffin tins and bake at 350 degrees for 12-15 min


Top with your favorite nut butter and eat!!!

    • Not too bad, but they were a bit dry so next time I will add a mashed banana and change up the flour to 1/2 c coconut and 1/2 cup almond flour.. But once you top it with PB it’s delish
