It’s NATIONAL PANCAKE DAY!
It sure is , so I needed to come up with a recipe for this special day. Here’s what I came up with.
PALEO COCONUT PROTEIN PANCAKES
1/2 cup coconut flour
1 cup unsweetened coconut milk
1tsp baking soda
1 tsp baking powder
1 tsp apple pie spice
2 capfuls of vanilla extract
1 scoop egg protein powder ( or whey,rice,hemp)
Mix all ingredients in a bowl and use either electric mixer or whisk. You may need to add extra milk if mixture is too dense or heavy.
Heat up a pan and melt coconut oil in pan. Add batter
Now to plate them… I did not make the toppings Paleo..on one I just added peanut butter and sliced bananas with real Canadian maple syrup.
The other is topped with a Greek yogurt/frozen blueberries blend… It was yummy
Now I’m stuffed!
