Another easy peasy meal idea here. This was my lunch today because I did not have time to make it for breakfast!
Flat out Fold it Sammich’s
Simply peel and slice a sweet potato, cook it in coconut oil until tender, season with salt & cinnamon. Once these are cooked, scramble up an egg right in the pan!
Then lay a fold it wrap in the pan and add the egg and sweet potato. You could add cheese too if you wanted, I didn’t.
Heat on both sides
Eat, simple right!
So very good for you too. Protein, veg and a grain in one serving! I’m eating this then heading out for my first Crossfit class! Stay tuned for that!
