This is probably the easiest “recipe” ever. You simply open the fridge and dump everything in a pot! Ok not really but here is how I make my easy peasy soup recipe!

Veggie Bean Soup

4 stalks celery
4 large carrots
2 large potatoes
1 large sweet potato
1 onion
1 can no salt added diced tomatoes
2 cartons vegetable broth
1 bag pre washed spinach
1 bag frozen Southwest blend veggies (black beans,corn,peppers)
1 can lentils & chickpeas – rinsed and drained
1 bag of dried bean soup mix ( I found mine at a local crafty store)
Spices to taste
Oil for sautéing

Sauté onions,celery and carrots in oil for about 10 min on medium heat.


Then add peeled and cubed potatoes and sauté an additional 5 min.

Add remaining ingredients and let simmer on low heat for 2 hours.



Mine is currently simmering so I will edit this to show the final product, but I had to share this ASAP!

Enjoy this with some fresh bread and bam – soups on!
