Pumpkin Doughnuts ROCK!

I wanted a doughnut today , but not your typical sugar laden one from the local bake shop! So I put my thinking cap on and created this little masterpiece!

Pumpkin Protein Doughnuts/Muffins

1/2 c oil (I used vegetable)
3 eggs
1 c sugar substitue (Splenda)
1/2 c Splenda brown sugar blend
1.5 c pumpkin puree (not pie filling)
spices- cinnamon,nutmeg,pumpkin pie filling (to taste, i used a few generous shakes)
1 tsp salt
1 tsp baking powder

Wet ingredients

Beat this till well blended

Then add 1.5 cups whole wheat flour and 2 heaping scoops of protein ( I used GNC egg protein, vanilla )

This is a Must!

Mix till combined. Then I added a few splashes of Davinci Sugar free Caramel Syrup! For extra flavour.

Secret ingredient

Mix well

Grease doughnut pans and muffin tins.

Oh My!

Bake at 350 degress for about 18-20 minutes. Check with toothpick to see if ready.

Now for the frosting!
Protein Frosting
1-2 tbsp sugar free Jello pudding mix, any flavour ( I used white chocolate)
a splash of Davinci syrup ( I used white chocolate)
1 scoop egg protein
water to blend

Protein Frosting

Mix it up till it is smooth. Drizzle on the goodies and add a few shakes of nutmeg!
