You all know I like to cook easy peasy recipes because I do not like to hang out in the kitchen all day. Enter my handy dandy Crockpot. I own 3 of these in all different sizes and shapes. So this morning chili was on my mind.
It all started with this assortment of products
Fantastic Foods Vegetarian Chili Mix 1 box
2 cups of water
1 pkg of Archer Farms (Target) southwest veggie blend frozen vegetables
1 Can of diced low sodium tomatoes
1 Can of Six Bean Medley, rinsed and drained
1 Can Dark Red Kidney Beans, rinsed and drained
1 tsp of Crushed Chipotle Chili Peppers
add all ingredients to a crockpot and cook on low for 5 hours.
Now I like to put my Chili on top of a big bowl of brown rice , topped with sour cream and shredded cheese.. because that is how I roll.
