Ok , first off here is the truth!
I totally cheated on this recipe! Why? Because I am a horrible baker! Ask my kids , they will tell you! So I used a packaged mix but I ink’d it up a notch or two!
For those of you who have a recipe for this bread , use it and then try out my frosting!
I used a lovely mix I picked up at Homesense. It was easy and that is how I roll.
I simply added 1/2 c melted Earth Balance ( you can use butter) , 2 eggs, 3/4c of canned pumpkin (not pie filling) 1 c water, 1/2 c walnuts, 1/4c sunflower seeds and some extra nutmeg to the mix.
Grease an 8x8x2 in dish or a loaf pan. Spoon mixture into it and bake at 350 for 60 min. Let cool for 15 min then transfer to a plate.
1 scoop of Vanilla Egg protein powder
2 tsp of Sugar Free Jello pudding mix Butterscotch flavor
Just enough water to blend but not be runny.
Mix together and drizzle on the bread. Now you have a cake! Not bread!
