I have been thinking about this for a few days now and today I decided it was time to make it! I had to search high and low to find bowls for it though. Mission accomplished – thank you Canadian Tire!

Here’s my recipe

French Onion Soup

2 large Spanish onions thinly sliced
Minced garlic 1 tsp
8 cups low sodium Beef broth
12 grain bread toasted 4 slices
Swish cheese slices or shredded
Thyme 1/4 tsp
Salt & pepper
1/2 tsp sugar
Olive oil for saute

Sautée onions in olive oil on med heat for 35-40 minutes, you want a nice carmelization- not burnt!
Add sugar to the onions about 10 minutes into sauté to help with this!
Then add garlic to onions till heated through.
Pour in broth, thyme, balsamic vinegar , salt & pepper and let simmer for additional 10 minutes.

Ladle into bowls, place toast on top of soup and cover with cheese.

Bake under the broiler for 10 minutes until cheese is bubbly.

Eat and enjoy a warm hug for your tummy!
