Well, really, everyday is Meatless in my house – At least for me and veggie boy

We started off with this stir fry

Just a big ole batch of veggies and some broccoli slaw.. all fried up with some sea salt,pepper and garlic!

Then came my first attempt at Eggplant Parm…

Started like this

I cut up a small eggplant and brushed them with olive oil ( after letting them sit in a colander for a half an hour to drain) then I dipped them in a mixture of breadcrumbs, garlic powder,salt, pepper and 1/2 cup of nutritional yeast. Baked in a 400 degree oven for 15 min.

Then – I heated up a jar of Marinara , because it was easy and I like easy!

Spread the sauce on cooked eggplant, and topped with shredded Italiano cheese and Parmesan cheese.

It turned out like this

Does not look to appetizing but they got eaten up pretty quickly!
As a back up plan I cooked these up too

These are SO GOOD! I was never a big fan of chicken nuggets before, but these dipped in some Caesar dressing , I felt like it was Superbowl Sunday!

Here was my Meatless Monday dinner plate!

Now I am stuffed, satisfied and ready for bed!
