Oh yeah, time for a little food porn! Not sure why I was thinking lasagna while strolling thru my local Walmart, but I felt like I must make it! So here’s what went into my fool proof veggie (not vegan) goodness
Sauté onions , minced garlic,mushroom and spinach, salt and pepper in EVOO
The throw in some vegetarian ground crumbles – I like Presidents Choice brand, cook up for 5 minutes
Add in 1 can diced tomatoes and dash Italian seasoning
Let simmer on low
Spread sauce in bottom of baking dish, layer with oven ready lasagna noodles, shredded cheese- repeat
Bake for 2 hrs at 350… Let sit 10 min then devour!!!!
