Ok well, my Plastic Surgeon is clearly my new best friend however, I have finally made the leap to Daiya cheese and I am most amazed! I was thinking pizza, lasagna or something pasta like to make for my first adventure, BUT I am detoxing on my carbs ( horribly I must add) and thought I would make this

Ok , where ya going with this Inkdgirl? I love love love broccoli and I wanted to try roasting it as opposed to the sogginess of boiling.. or even steaming wasn’t what I wanted, so here goes the “recipe”

Large bunch of broccoli , cut into florets
splashes of olive oil
minced garlic, 2 tbsp
kosher salt
Daiya mozza shreds

ok so this is really tough to do, line a tray with foil, lay out broccoli , splash with oil( 5 tsps?) , salt and p, add minced garlic…. mix it all up on the tray, use your hands!

Bake in a 400 oven for at least 30 min, (well ok I have no idea how long, I went for a shower and came back at least 30 min later!) feel free to go in half way and toss em about again! add more oil if needed… then add your Daiya and bake for 5 more min!  AWESOMENESS!!!!

  1. Next trip to the US I'll be looking for the pepperjack flavour, we only have mozza and cheddar here, maybe a trip to Whole Foods in Toronto I can find more flavours!
