Yes it is true, me and the old crockpot are best friends. I am a busy girl and I do not like to come home after a workout and try to come up with supper ideas, enter crockpot.. it takes but a few moments in the morning and bang..supper is ready when you walk in the door..here’s my sweet lil crock pre cook

and this is what’s for dinner!

Drooling yet? This is a clean out the fridge kinda soup , which to me makes for the best soup!What’s in it you ask?

Organic Quinoa- rinsed and drained (1 box)
1 carton of organic vegetable broth
1 can diced tomatoes
spinach , a few handfuls
some kind of small pasta
carrots
onions
celery
beans, six bean medley
some lentils
frozen peas
and some spices… Italian, curry,cumin, whatever suits your fancy.. I just used good ole S&P!

Nice recipe eh! Honestly I never ever write things down and I am very much a just throw it in the pot kinda cook, but oddly enough it still tastes delish!
So I am serving this up with a nice big baguette, yummoooo!!!!
EDITED to add that this was the most amazing soup ever! The cooked quinoa made it ! It filled me up post run and dipping the freshly baked baguette into it was pure soup heaven!
